My eurail train timetable only says there is a train in the middle of the day, which would be a bummer since we are trying for mostly night trains to avoid time loss. Anyone know?

There is a night train that stops in Nice at 20:17 with couchettes. However, you lose that train 4hrs later as you change to another train just after midnight. This train does not have "sleepers". It's a 15.5hr train journey to Barcelona from Nice on this train run. Day runs are on the faster TGV train and will take about 12.0hrs.
There is a night train from Torino in Italy through to Barcelona but it doesn't go near Nice. You would have to take a train to Perpignan, France to pick up this train and this is a 6.5hr train ride to the southwest from Nice to meet this train.
You should look into the www.vueling.com flight to Barcelona from Nice. They show a flight at 23:10 that takes 65 minutes. That puts you into Barcelona at about 12:15am (middle of the night).
