We will be in Ploce central Dalmatia approx 8am to 2pm. Is it possible to get to Mostar and back in that time frame? (We are on a cruise timetable.) Also, can you recommend a bus or a guide? Grazie!

Unfortunately, I don't believe that will be enough time for you to get to Mostar and back. The train takes about 1.5 - 2 hours from Ploce to Mostar, and although I'm not sure how long the bus ride is, I'd imagine it takes at least that much time. Another factor to take into account is border control, which can be quick and efficient or long and arduous.
Mostar is definitely worth a visit, so hopefully one day you'll get to go back and spend some time there!

With only a 6 hour window, you're only hope would be to find a private driver that could meet you at the port. It's a 1+ hour drive from Ploce to Mostar even if no delays, so you'd have 2 hours max for your visit. If there's a TI in Ploce, maybe you could e-mail and try to arrange for a driver through them.
