Customs, time needed

We are flying from Washington State to Turkey in September. We fly from Spokane to Seattle, New York (Kennedy), then Paris (CDG) and then Istanbul. Where do we go through customs and how long should we allow for that?

Customs is almost never a problem. You just walk out the green door (nothing to declare). You will get your luggage at your destination if you are on a single ticket. That is customs (tax collected on imported goods).
Immigration is a whole other matter. They will probably want to see your passport every step of the way. In Paris, are you on a single airline (no code shares) so you know you do not have to change terminals, thus entering the Schengen zone and requiring a passport stamp? Definitely in Istanbul, where I believe you need a visa to enter.

You do need a Visa to enter Turkey-it's pretty painless, $20 on line. I am not sure if they will send you through PP at CDG, you might just be transferred to another gate as you are not "technically" entering the EU.
