We have an 8:15 AM flight out of Ciampino Airport. Can anyone suggest a hotel at the airport that has a shuttle service that leaves around 6:30AM?

Good luck. That is an out of the way, secondary airport. Try Trip Advisor.

I have flown out of Ciampino Airport twice in the early morning (8am). Both times we arranged a taxi from central Rome through our hotel or through Rome Airport Shuttle http://www.airportshuttle.it/
Worth every penny to not change hotels and to know you'll get to the airport in time. I don't think there are any hotels that are near that airport anyway.
