Does anyone know the approximate travel time, by Metro, and the number of metro zones this would be? We want to catch the non-stop high speed rail to Amsterdam.

about 22 minutes. So leave about 45 for travel to be on the safe side!
It's 5 zones. From Zone 5 (Charles de Gaulle) to Zone 1 (Gare du Nord). You will take the RER (regional) rather than the Paris Metro. Just follow the signs to "Paris by Train." Buy your ticket at the window with the person, don't try to use the machines unless you have exact Euro coins.
And for timing, count on between 30 and 45 minutes for the RER run itself, depending on which one you catch (some make more stops than others).

To be specific, you will take the RER B directly from CDG to Gare du Nord. The fare is €8.50. Lines can be long at the ticket windows. The ticket machines only accept coins and credit cards with embedded chips. Get some euro notes at an ATM and then get coins from a change machine to use in a ticket machine.
