En route to France, I change planes in Chicago. Before I get on my flight to London will I be required to go through customs or will I simply proceed to my gate to await my flight to London?

You wont go through Customs until you get to the UK. If you have checked luggage, you will also be required to get your luggage before going through customs. It will also be the same way on your way back, you will have to get your luggage and go through customs in Chicago before getting your connecting flight.

Kate, you say you're en route to France. If you're taking a connecting flight from Heathrow to France then immigration/customs will be in France not Heathrow. But if your connecting flight from Heathrow to France is on a discount airline and you have checked luggage, you will have to exit and reenter the airport, and you will have to pass through immigration exiting the airport and again reentering.
