Arrive at CDG at 7:50am, what is the minimum connection time I should allow in booking a reservation for the TGV to Avignon?
If I miss the train, do I just get on the next one?

The first train from CDG to Avignon departs at 08:21. Obviously, you won't be able to catch it. The next one departs at 11:43. Plenty of time there. If you book a full fare ticket, you can exchange it for a later train at no charge.
If you book a discount fare ticket, it's worthless if you miss your train and you'll have to buy a new full fare ticket.
