I'm planning on taking Thalys from Paris to Amsterdam and would like to be able to get off and check out a city in Belgium. Is this possible without buying another ticket?

The best way to do this is simply purchase the Thalys ticket from Paris to Brussels. When you are finished with Brussels just hop on a regular inter-city train to Amsterdam. They operate at fifteen minute intervels, are almost as fast and no advance reservations are necessary; fares are about 30 euros. In case you are wondering there are no direct inter-city trains between Paris and Brussels; for direct trains you must use Thalys.
Thanks to Michael for the advice on traveling from Paris to Amsterdam with a stop in Brussels. I'll do just as you suggested and get a ticket from Paris to Brussels, and then travel on the inter-city train on to Amsterdam.
