I have booked Rome-Florence, Florence-Venice on Trenitalia website but have not been able to book Venice-Lake Garda - the dates are june 10 Does anyone know what the problem might be?

Actually, those are not all regional trains. The faster option is the Eurostar train between Venice and Milan; it stops at Peschiera del Garda. On this type of train one can save a lot by booking in advance. It seems that Trenitalia has not yet loaded complete schedules for travel after June 8. They show a full panoply of trains that day, but only one option for June 9 and June 10. It is a Eurostar departing Venice at 16:20, arriving Peschiera del Garda 90 minutes later. Mthe 19 euro fare is available but not the 9 euro one. Base fare is only 23 euroso there is not a huge advantage in advance purchase, unless the 9 euro fare shows up when they offer the full schedule.
Without looking at the schedule I would assume it is a regional train which can only be booked seven days in advance. But no reason to do that since there are no discounts and no reservation. Of course, this assumes a train goes there. I will check the schedule later.
