We are traveling from the US to Madrid and then directly to Morocco. We wanted to book the Madrid-Morocco flight using EasyJet but there is only 1 flight and it leaves an hour after we arrive so we will not have enough time for customs. Is there any issue with booking two 1-way flights (re: customs, etc.) instead of a roundtrip flight? Thanks for any help you can give.

No - you will not have any problems with one way flights. In fact, no one will care.

No one will care or notice. There are several discount airlines that fly between Spain and Morocco, so if EasyJet's schedule doesn't work for you, you might want to explore other options.
