Regarding the transport question, this is a good place to start:

Regarding accommodations, how much per night do you wish to spend?

Edited note about using a private driver: I'd only choose this option from Naples> Sorrento, not all the way from Rome. It would be very expensive for that distance. As well, if you are flying out of Rome after your stay in Sorrento, you'll want to stay IN Rome or closer to the airport the night before your flight, especially if the flight is mid-afternoon or before.

When we went to Sorrento from Rome, we took the fast train (ticket purchased a few months earlier) to Naples and then took the Circumvesuviana. Not sure what you are looking for and Its been quite a while, but we stayed at La Magnolia near the main square. Our rate included breakfast. We liked the location because its close to the bus/train station.

I would recommend any accommodation (booking.com) that fits your budget that is still available. This is late to be booking for May on the Sorrento/AC Coast. There is no shoulder season post-Covid. It will be very crowded already.
We used Aldo Limos for private transportation. The public transportation modes south of Naples have been sadly neglected and are uncomfortable.
After Knowing the realities on the ground, and planning for them, you can have a great trip!

Italo allows you to book Rome - Sorrento on their site, and what you get is a high speed train to Napoli (Centrale or Afragola), and a coach service from there. They offer several departures a day, and I think it strikes a good balance between cost and comfort.

Most people take the train from Rome to Naples and then catch the the Circumvesuviana to Sorrento. The Circumvesuviana is a sketchy commuter line that's similar to riding the NY subway in the late 1970s. Pickpockets are known to target travelers with luggage. Since you are seniors, I agree with the earlier post that the Italo train-bus connection would be better. It's one ticket with a very easy transfer. The Italo train stops at a suburban Naples station where the bus waits to take you to Sorrento.
