I will be traveling by train from Salzburg, Austria to Nuremberg, Germany on Saturday, December 1. I was looking at the schedules and information on Bahn.de regarding restrictions on using the Bayernkarte. I know I will be fine using it at any time of my choosing on December 1, as travel at any time is allowed on weekends, but the only connections I can see all involve intercity express trains for at least a portion of the trip. It is my understanding that the Bayernkarte is only valid for travel on slower regional and not express trains. Am I correct, or is it possible to use this fare from Salzburg to Nuremberg on an ICE train?
When you search on www.bahn.com, click the button "Local Transport Only". Voila! Only regional trains will show up and it will show the prices with a Bayern Ticket.
Looks like the fastest connection is 7:15 Meridian to Munich, then regional express to Nuremberg, 3 hours and 14 minutes total travel time, but note an 8 minute connection at Munich Hbf from Track 10 to Track 21. Gotta hustle.

Be aware that the 9:15 itinerary, the train to Nuremberg is a regionalbahn, meaning that it will stop at every station on the way to Nuremberg. It takes 2 hours and 51 minutes to get from Munich to Nuremberg, making 26 stops along the way. The regional express trains do it in 1 hour and 45 minutes, making only 7 stops along the way. You could take the 8:15 Meridian and you would have 58 minutes until the next RE, time enough for some breakfast in one of the many station restaurants. Or, try pretending your are a real Muenchner and have a weisswurst and a beer.

That's true for the screen you get with a query using the Bahn.com site link above, but with this site, the "local transport only" option is there from the beginning.
However, in either case, if you get one schedule and then try to make a change, the new page does not show the local transport option. You have to click on "Change other data" to see that option.
I emailed Bahn.de and they say on those kind of tickets, no ICE, IC, EC, Thalys, or overnight sleeper trains.

It is not the distinction between RE and RB that is decisive, but rather the route they take. Only RE's taking the ICE route can do it in 1:35 - 1:45 (simple test for the right train: it has to have a stop in Kinding). There are RE's going via Treuchtlingen and Regensburg, which are almost as slow as a Regionalbahn. Rule of thumb: avoid all connections going via Treuchtlingen or Regensburg.
Unless you want to see the beautiful town of Regensburg.
