Thinking of flying open jaw to visit Barcelona, Madrid & Lisbon. What are the best and cheapest ways to get to and from each city from LA?

The best way is the cheapest way....and it'll depend on when you plan to go, what day of the week you travel, and what cities you finally choose. Use search engines like Kayak, mobissimo, travelocity, expedia (et al) and their "multi-city" functions to run combinations of the three cities....then keep an eye on the prices until a deal for one of them comes along, and grab it.
For moving BETWEEN those three cities the AVE fast trains are the best for Barcelona-Madrid (book up to 62 1/2 days in advance for cheap fares at www.renfe.es) and discount airline Madrid-Lisbon (check sites like whichbudget.com)
