When we get on the Paris Nord to London, it says we end up at St. Pancras station, any other stops, or is this it?

It is the only stop in London. The Eurostar may also stop in Ashford, UK.

First time on Eurostar (Paris to London), was half asleep, assumed the train when stopped was at Waterloo Station (old Eurostar terminus), got off at Ashford. Cost me about $40 and 2 hours from Ashford to London on a 'milk run' train. Ah well, live and learn.

They will announce when you arrive in St. Pancras - like you are landing on an airplane. If your trip is more than 2h 15m you are most likely making a short stop
Just to help you - St. Pancras is next to King's Cross Station (underground).
