My wife and I are travelling on Canadian passports.
Any idea how early before our flights we will need to arrive at the airport for between European flights?
London - Lisbon
Lisbon - Valencia
Barcelona - Venice
Rome - Santorini
Athens - Paris
Will we be International, or regional, or...
Any insights greatly accepted.

No experience with Canadian passports but assume it is similar to a US. Couple hours is adequate. Of course, time of day, holidays, can impact that number. Our experience time wise is about the same a flying in the US. All of your flights would be consider domestic.
Arriving in Lisbon (first stop in the Schengen zone) from London, you will have have to go through Passport control. After that, all of your travel is within the Schengen Zone. They are allowed to have passport checks, but rarely do. It's like flying between states in the U.S.
Inter-EU they normally do not start check-in earlier than 2 hours prior to flight time, however, expect to show passport as I.D. when checking-in and at the gate.
