Amica fares

I will be traveling in June/July & have some specific times that I need to depart/arrive in certain cities. Is it smarter to wait for the cheaper Amica fares in Italy or to purchase ahead of time and guarantee the times I need? It seems that trains frequent the Rome-Florence and Florence-Venice lines, so I wonder if running out of seats would even be an issue? Thank you for your help.
