Amboise-Bourges: maybe. That train journey takes about 4 hours. Arles is out of the question. It's at the bottom end of the country and there is no high speed connection between the stations.
Euros: Exchange ~100E or so as "starter cash." Fund the rest of your trip via ATMs in Europe. Be sure to notify your debit/credit card companies of your excursions abroad.
Amboise-Arles would be about six hours. Not ideal but feasible. Amboise-Bourges-Arles in one day--not unless you love train compartments.
Amboise-Arles might be more palatable if you design your itinerary to spend time in Paris in between. So if our plan was to arrive in Paris and spend a few days there before going on to Amboise, you could consider going directly to Amboise first thing and saving Paris for later.
