Advice on doing Mediterranean cruise excursions independently

I'm taking my wife and 2 kids on a dream cruise vacation in the Mediterranean: Venice, Dubrovnik, Athens, Rome, Florence, Nice, and Barcelona. Since the cruise is stretching my budget, any advice for seeing the sights on our own and avoiding the ships expensive excursions?
