I will be disembarking from my cruise between 6-8AM,should I book early or late flight from Rome?Given the time needed to disembark and travel from pier to airport,I'm leaning towards a 2PM flight.

Don't cut yourself too short. It's better to have a little extra time at the Airport than having to rush to get there.
I think your ETD of 2pm sounds reasonable. But I wouldn't suggest you make it any earlier than than, all things considered.
Do you know how far it is/estimated travel time from Pier to Airport? That might be a good thing to know. However long it is, double it, just incase something delays you in transit.

You are fine. You can make it easy. On our last Rome cruise we were in Florence by !PM and back in Rome by 9:30
