We fly from Miami connect in Rome and then end in Florence. Where will we go through customs and how long will it take?
Immigration (passport check) will be in Rome. Customs (the stuff you're bringing with you) will be in Florence. How long you have to wait depends on how many other international flight are arriving at the same time...you may have to wait for an hour or 5 minutes.

Probably will be enough time, you will also have to go through a security check when changing flights in Rome as well, so it will be tight. Assuming all of this in on the same ticket, the airline should be able to put you on a later flight if you do miss the original connection.

You should be just fine on the connection. Eastbound flights from the US often arrive early anyways (due to favorable winds and whatnot) so you can often have more time than you think.
