We are traveling in mid-June from Florence to Positano and wondering the best way to get there by train. We are traveling with children and luggage and looking for the quickest choice with the fewest transfers and of course spending as little as possible. We already have Eurorail passes.

Train or possibly fly to Naples then hire a car service to take you to Positano. Easiest way and well worth it IMHO. Naples is not a fun place to figure out transport with luggage and kids.
There is also a ferry service that runs from Naples to Positanon but we were never able to cordinate correctly with the train.
Since you already have Eurorail passes, take the high speed train from Florence to Naples (3 hours - no changes required). Then, as Tyson suggests, arrange a private transfer. Your Positano hotel probably offers car service directly from the Naples train station for about 100 euro. That's 3 or 4 times the cost of train to Sorrento and bus to Positano, but is much simpler and may be a good value for you.
