In Arles the Hotel Calendal gets excellent reviews on TripAdvisor, and just received a third star. I havaen't personally stayed yet, but am going to, soon. They have been very responsive by e-mail, and the rates are reasonable.

It has good reviews as well.
We are booked here for June and have been very impressed with the correspondence to date.

I've stayed at Hôtel Amphithéâtre twice...in 2003 and 2006 and can only say good things about it. Especially enjoyed the "main" building where the reception is.
