I am travelling with a Eurail pass. When I need to make a seat reservation, can I do it from any ticket machine? I have read that ticket machines don't take North American credit cards...is this true?

If it is just a "seat reservation", and not a premium or night train supplement, in Germany it is only €4. It seems silly to use a credit card for that small amount. I think it is about the same in other countries. Ticket counters will accept cash, and I never found lines to be a problem. A lot of ticket automats also take cash.

Ticket machines in FRANCE require cards with embedded smart chips so they don't accept North American credit cards. You'll need to either insert coins in a machine or go to a ticket window if you want to use a credit card.
