The odds are astronomical that you would be the only one in Italy wearing whatever you are wearing now.
Give up the idea of not being recognized as a tourist. Being a tourist is nothing to be ashamed about.

I just looked through my photos from last September in several parts of Italy. The hats on men I have in my photos are light-colored fedora styles.
I agree, that it’s important to wear a hat that has UPF 50 and a brim that’s at least 2 inches. This has been recommended by our Dermatologist. One brand is Tilley. Guaranteed for life of their hats, they will not shrink or fall apart. One consideration is their Montana fedora style. Currently my husband has the Tilley airflow, for warm weather. That said, he is considering the Montana Fedora style now. Can’t go wrong with this iconic style. What he avoids is a baseball style due to lack of protection! Lots of great UPF 50 choices to fit your needs.
My last visit to Italy, I noticed that older guys tend to wear fedora hats and younger guys go for newsboy type others call it the 'tweed cap'. If you want more protection from the sun, I'll say go for fedora hats regardless of your age.
According to my brief research using Google street view in Rome, it seems that baseball hats are what everyone is wearing. But to be honest, wear whatever hat you like - no one cares.
It's somewhat of a shame everyone wears baseball caps nowadays and looks more or less the same. I can still recall "back in the day" when you would see many folks in culturally-specific attire.
As I recall, the older guys wear fedora type hats, the older tourists wear floppy wide brimmed hats like one would wear on safari (matching shirt and pants with lots of pockets and zippers optional), and the younger guys wear a baseball cap, but it must be a New York Yankees hat. That goes for Rome and Northern Italy, as you go South, the older gents wear a flat cap, and in some places almost becoming a beret. Hats in general though are a minority.

I agree that you should wear whatever kind of hat you want.
DH has been wearing Tilley hats for many years. They have several types of brimmed hats; DH is currently wearing one with a mesh crown that provides great airflow in hot weather. For more active/casual wear he has a couple of Tilley bucket hats. Baseball caps only keep the sun out of your eyes. DH only wears one now for driving.

When I go to Europe, including on RS trips, I just buy a straw-type hat on the street in the city I start in, then discard it when I return. They are usually 5-10E. You might want to bring a casual cap to have something to start with that first day.
Youtube is full of walking videos of Rome, and every other major city in the world. Just review a few and come to your own conclusion. Make sure you're getting enough protection, the sun could be more than you're used to.
