Why don't you call the tour department and find out which hotels you will be using in Venice and Rome, then contact the hotels to see if you can book the extra nights?

If you are on the tour you should already know what the 1st/last hotels are. You can contact them for the additional days.

I had thought of contacting the tour but since we arn’t thinking of going until Oct ‘19 I thought it may be too early. Just thought I could check out some of your recommendations. We had not planned on a big splurge. Thanks!
