We are signed up for the Sicily Off Season tour in November which ends in Catania. I want to see Taormina and the summit of Mt Etna. Would you recommend staying put in Catania and day tripping, or relocating to Taormina?

I have not visited Catania, but can thoroughly recommend Taormina. This has an exquisite high street lined with ancient buildings, many fine restaurants and views of the sea and the Italian Mainland. There is a fine Greek amphitheatre which is still used for opera. Mount Etna dominates views to the South. My wife and I stayed in the Villa Sonia in Castelmola, which is in a village perched on the top of a mountain above Taormina. There are wide views of the Sicilian landscape and the smoking summit of Mount Etna.
