For Pompeii, I would allow four hours. Some tour it in two or three hours but we found there is so much more to see so stayed for four hours. Haven’t been to Herculaneum yet.

Pompeii is huge and could easily consume the day. I would take a two hour guide tour and then use two additional hours to explore further or to hit some places that the tour guide passed over too quickly. Just to keep it straight Pompeii (two "i") is the name of the site and Pompei (one "i") is the name of the current town. I know it is confusing but keep it straight so you don't end in a different place than expected.

If you get an early start, and assuming no long travel time to get there, you can do both in one day. About four hours on site at each. We did both in one day and, while we could have spent longer at each, we didn't really miss a whole lot.
