Celiac-friendly restaurants on the GAS tour

Hello--
My husband and I are looking forward to starting the GAS tour (our first Rick Steves tour) in June. Since my husband has Celiac disease, I'm currently going through our tour planner guide and looking up restaurants' online menus to see if they might have dishes with no gluten. By any chance, do people on this forum know of places to dine that offer good gluten-free options? We'd be especially grateful for suggesions in Cologne, Munich, Salzburg, and Vienna, but would welcome suggestions for any of the other places as well. (note: I know that some Celiac people can eat bread in Europe, but we don't want to chance it)

I have found the app “find me gluten free” very helpful in Europe.

People with celiac should not eat normal bread in Europe as it all contains gluten, even rye bread.

The confusion could be because some people with gluten intolerance, which is very different to celiac disease, find that higher quality bread from proper bakeries is ok for them to eat.
