Can anyone recommend some good restaurants for dinner that you discovered while on this tour? I noticed there are six nights where we'll need to find a place to eat.
The tour has been re-arranged since we did it ( pre-covid).
The couple of "Lunches" that are included were full meals. Those days I think we just had snacks/appetizers and a carafe of wine for "dinner".
What we found in the guide book and the guide's suggestions were never a disappointment.
Just finished this tour. Unless you are very choosy it should not be a problem. There were lots of big lunches so evening snacks with drinks were fine. Several of the stops were small towns and we were there in March—not quite tourist season but plenty of choices. If you have specific dietary issues or prefer seafood etc, the guide will definitely help.
We got to Athens 3 days early and had souvlaki, a food tour and a late lunch at a restaurant in the row of restaurants between the Acropolis Museum and our hotel. It was fish of the day (whole fish so for 2-3) with lots of sides. In Hydra we decided to get pizza and our hotel recommended Caprice. Very thin crust Marguerita and authentic carbonara—both good.

Athens
we ate at the Balcony Restaurant and Bar, and sat out on their 3rd floor terrace.

Later, our final RS dinner was at the same Balcony restaurant. so we ended up eating here twice. We also ate at Mani- Mani. It was OK, but lots of RS tourists like it.

Reservations are suggested, but we didn't have one and they still found a place for us. They set up a table on the sand, with a candle. As the sun set, it got dark and was hard to see our dessert, but it was wonderful.
Next night, I organized a group of us to eat at Dioskouri Taverna. https://www.dioskouri-kardamili.gr
It was a walk up the road, from our hotel, but had great cliffside views. I walked up at lunchtime to check the place out. I made a reservation for 12 people for 6:30 pm. And when we arrived, the large table was there waiting for us, outdoors but under their porch. Good thing too. Because it began raining hard as we ate dinner, but stopped and the clouds cleared and the sunset was beautiful.

You will be staying in Gefira, probably at the Panorama Hotel, Walk down to the waterfront and walk right along the waterfront.. There are many restaurants.
But we ate at Idisma-Artima (It was in greek letters- so this is the best translation I can get). Fantastic seafood. Great views from their outside covered patio.

For lunch, we ate at Xeri Elia Douskos. It's famous for something to do with Leonard Cohen. But it was near our hotel.
