We are planning a bike tour in the Piedmont region, but then plan to travel to the Dolomites to do some hiking. Anyone know how long it would take for a train ride from Milan to Bonzano?

You need to look at the train schedules and routes. From Milan, you don't go to the Dolomites via Venice.
Milan to Venice, 2.5 hours.
Milan to Bolzano, 3.5 hours.
But Milan to Bolzano via Venice is long--more than 5 hours.
IF you want to see Venice (and hopefully stay overnight---well worth it---then go the longer route. Otherwise. take the more direct route to Bolzno, where you can pick up a bus into the heart of the Dolomites.
