Winter Day Excursions - Rhine and Danube Rivers

My Wife and I are planning and Christmastime trip and want to take a one-day or half-day excursion on both the Rhine and Danube Rivers. Because it is Winter I would like to know if day excursions will be available? Thank you, Jack
