The Loire Valley is fairly simple to navigate. Two roads run parallel to each other on each bank of the river, and most of the chateaux sit within a kilometer or two off of either road. All you really have to know to find a particular chateaux is on which side of the river it sits and in which direction. Just follow the signs from there.
For an itinerary... check the Wikipedia entry for Chateaux of the Loire Valley. See which one's interest you. Plan on visiting two chateaux per day.
