Any recommendations for a young couple looking to explore the Belgium / Luxembourg area?
Right now, our plan is to fly into Belgium and take the train to Luxembourg, then over to Bruges, and then back to Belgium to fly out. [Any alternate transportation ideas -- know it's a bit of a loop but can't find affordable airfare into Luxembourg]

The distances you're talking about are small enough that looping back isn't much of an issue. Luxembourg City is good for a quick visit, but don't spend too much time there.
As a young couple, you may enjoy spending an evening in the university town of Leuven, just to the east of Brussels. Check out the restaurants that line pedestrian-only Munstraat, similar to Brussels' Rue Boucher, but with virtually no tourists. After dinner, head over to the outdoor cafes at the Oude Markt and enjoy one of the best evening social scenes in Europe. Once again, you will be the only tourists in a crowd of hundreds.
This might interest you as a possible place to stay in Luxembourg, I know I would like to stay here. It is one of the towers that has been made into a hotel/apt. I think it is often booked full, but give it a try.
