Vegetarian restaurants in Paris/Amsterdam

Does anyone know of good vegetarian restaurants in Paris or Amsterdam?

I've had wonderful Indian food in Paris and Soup En Zo is a regular stop for me while in Amsterdam...

But what about vegetarian restaurants serving organic produce and soy products? I assume I'll have better luck in Holland?

Best source of info that I have found is happycow.com. They list both restaurants and shops selling veggie foods. Works for me every time, and I'm vegan.
