I stayed at Hotel Goldene Krone on my last visit to Salzburg. It was in a convenient location, the rooms were very comfortable and the owners were great.

Sorry, I don't have any suggestions for Valencia.

We stayed at the Hotel Sorolla Centro two years ago in Valencia. Don't remember the cost, but it was during Las Fallas so rates would have been elevated anyway. Great hotel, very helpful staff, located just a block or so from the train station, in the beautiful old part of Valencia. Hope this helps!
