My friend and I will be in Paris for 8 days and thought to go to a quieter place from there. Uzes was highly recommended as a place to go but would it be too hard to see the surrounding sights and towns using public transport? Or would we be better off staying in Arles or Avignon?

Uzes is a beautiful town but rather off on its own. If you're relying on public transportation, stay in Avignon.
There is plentiful transportation from Avignon. I understand that the bus depot has been moved from the dark, dingy place near the central train station.
We stayed at a wonderful B&B near Uzes last year and we loved the town and the area. It was an easy base for exploring Provence. But we had a rental car. Unless you decide to rent a car, I'd agree with what Doug says. Personally, I'd pick Arles over Avignon as a place to stay, but I don't know if the public transportation options are as good. Avignon was a little too urban for our tastes.
