My husband and I are not skiiers, yet we would love to take the Eurotrain from Paris to Lausanne just to experience some ski communities. Can you recommend which towns to visit and possible sleeping accommodations for non-skiers?

my wife and i did the same thing a few yrs ago stayed in interlaken and we used a rail pass and traveled to : lauterbrunnen zurich zermatt lausanne grinndlwald murren went up to the schilthorn a couple other places i don't remember met up with afew people on the trip that didn't ski so each day was mostly travled with them we had a grand time of it ! as i'm sure you will we stayed @ the central hotel in interlaken which was ok but not " top shelf sort of speaking " enjoy your trip mike o ps

Switerland offers a lot in terms of mountain thrills for non-skiers (and not winter sport persons in a broader sense). However, Lausanne is not the most adequate place to get that impression. I would recommend you to travel to Interlaken or Zermatt for that. Both are easily accessible by train.
Or stay in Lauterbrunnen and visit the Schilthorn and the Jungfrauhoch.
Close to Lausanne is Verbier, a trendy ski area. Cute town. Also famous Chamonix is relatively close.
