What is the best way to travel economically from London to Brussels to Paris & back? Also, would be willing to consider Amsterdam if it helps reduce overall travel costs.

It's probably too late to get the cheapest fares, but checkout these sites:
From London to Brussels take the Eurostar train:
Brussels to Paris the Thalys high-speed train:
From Paris back to London again use the Eurostar.
For both trains, the sooner you book the cheaper it will be.
It is a shame you didn't book the Eurostar months ago,,, its cheap then, I paid 80 euros return in June. It is the easiest ( city center Paris -London) to city center in 2.5 hours) ,,but now, will most definately NOT be the cheapest . You may have to look at flying, but add in travel time and cost to and from airports, and buses... I have done neither.
Last minute trips are exciting,, but can often be more costly.. good luck. Lovely time to visit anyways( I like summer in Europe) .
Have you considered flying "open jaw." You could fly into London and out of Brussels. Connections from Amsterdam are not very good, but there are lots of flights from Brussels. also check out Ryan air form flight from London (Stansted near Cambridge) to France. I'm pretty sure they don't fly into Paris directly, but we flew from Stansted to Normandy for about $40.
