Trip is booked 16 days total, now need recommendations!

Hi ALl, We got our trip booked, all airfare, trains and hotels are taken care of. Now we are looking for recommendations of day trips, sights and places to eat. We're arriving in Zurich, and departing from Rome. In between our schedule is Zurich 1.5 days Lucerne 1.5 days Munich 4 Days Venice 1.5 Days Florence 3 Days
Rome 4.5 Days We'll see the obvious sights, and Oktoberfest, but there are two things we want to do that we are unsure of the best way to see them. One is the castles in Bavaria. We're concerned with Oktoberfest these might be super busy. The other thing we wanted to do is a Tuscany tour outside of Florence. We love wineries and visit Napa & Sonoma often, so this is a must do. We thought about renting a car and driving. The added benefit is we can stop by a small town my wife's family is from, that I doubt a tour will go. We could also book a tour group, or hire a private driver. Outside of those two things, anything else we must do?

David- I was in Rome last year in October for 3 weeks and absolutely one of the highlights on that trip was the all day bicycle tour to the Catacombs and through the old city walls of the city ! keep in mind that it was a total of 23 or so miles so whomever signs up must be fit and able to bike for that long period of time! If you are up to it- it was amazing ,our tour guide was super knowledgable on Roman history , and I will do it again now on my vacations! Great way to see the nuances of the city!
I used the site Viator.com to reserve- ( I don't remember the exact tour company unfortunately) . They also have a Rome by night tour that I heard was fantastic also! Laura

Thanks Laura, did you have to ride through traffic much? My wife tends to get nervous riding in heavy traffic. Ralph, what method would you recommend to get out to the castles? a tour group or public trans?
