My son and I are planning a 2 week trip mostly in the Provence and a little time on the Riveria. We would like to ride bicycles for 4-5 days probably in the Luberon Hills area. Do the towns along the way have bed and breakfast places that we can stay without booking in advance?

My advice is, Do not travel without reservations by bicycle to small towns at high season unless you and your son are prepared to be very very flexible at the end of the day. Off season should be no problem.
Are you renting your bikes in Provence? You may find that the shop you get your machines from will offer to book an itinerary for you, depending on what you want to do. I don't mean a guided tour--just a route and some reservations and lots of advice.
