Looking for recommendation on itinerary for 6-8 high school graduates accompanied by parents. Want a hiking/youth hostel experience for kids while parents follow along in nearby hotels/B&Bs.

France I can help out. Normandie, check out bandbnormandie.com for a rural farmstead with lots of room, not far from Bayeux and the D Day beaches. You do know that rail tickets are the cheapest. Check out seat61.com for all rail and ferry details. Rental vans? AutoEurope, based in Maine, is your best resource all across Europe. Looks like you have way too many countries on your list. You must either have 6 months or you are too ambitious. Stick with France and Germany or you will be frazzled trying to fit in all those countries. Are the kids all over 18? Many hostels refuse to accept minors without a guardian (and a 18-and-3-months old classmate won't do the trick) and/or in dorm rooms.
