Hi, does the SNCF ticket to Chateau de Fontainebleau cover both unlimited transfers for metro and bus? And what bus do we take from the Fontainebleau station to the Chateau? Thanks!
Your ticket will cover the ride from Gare de Lyon to Fontainebleau-Avon. You'll need to buy a ticket for bus 12A to the chateau when you get to the Fontainebleau-Avon station. See this page.
I just checked the Transilien site and it looks like a single ticket costs the same from anywhere in central Paris to Fontainebleau-Avon. So it will cover any Metro and/or RER rides you would need to take to get to Gare de Lyon where you will catch the train to Fontainebleau-Avon. You'll need to buy a separate bus ticket at Fontainebleau-Avon to get to the chateau.

Yes, you can buy your ticket in advance of the day you wish to use it. It's an open, undated ticket (like a t+ metro ticket).
