Are you asking about scenic trains? Or is there someplace in particular (Berne, Alsace, etc.) where you would like to stop along the way?
Otherwise I'd suggest, Pick a train that leaves and arrives at times that work for you, and let the rail service do the worrying about the route.

From Interlaken you can take a train to Basel, then change to the TGV to get to Paris. This route arrives at Gare Est. You could also take a train from Interlaken to Bern, change to a train to Geneva, and take the TGV from Geneva to Paris. This route arrives at Gare de Lyon. Either way, plan on 5 or 6 hours, more if you stop to wander through any of the cities along the way. Basel, Bern, and Geneva, all have their merits for a few hours of walking around, especially on a nice day.
