Toulouse:Paris by train - 1 night/day free - can we get to the mediteranean

We will be traveling by train between Toulouse and Paris in May 2012. We have 2 days to get to Paris and would like suggestions on easy access towns where ideally we can be near the Mediterranean for a day/night.

I suppose you can drop down to someplace near Perpignan. Collioure is nice, or some other Catalan town. About 3 hours to get there, about 6 hours from there to Paris via Avignon.
