My husband and I will be leaving Schwangau,Germany ( New Neushwanstein area) driving to Lindau to drop off car, take boat accross Lake Constance to Rorschach, Switzerland, hope on a train (which one? and getting off in Appenzell. I was looking for a Mountain Inn but having a hard time trying to decide how far a "walk" from the train station to the nearest "lift" Don't want to be doing this in the dark:)
Any ideas of where to stay, reasonable amount of time to plan

I can only tell you what we've done and what is feasible. From Friedrichshafen we took a morning ferry over to Romanshorn, Switzerland. We drove to Appenzell (about an hour), walked around and had lunch. We then continued towards Schwägalp to take the cable car up Mt. Säntis (spectacular view on a good day!). In the evening we drove back to Friedrichshafen via St. Margarethen and Bregenz, Austria (so around the Eastern end of the lake). This was all very well doable in a day. So my recommendation to you would be: Instead of dropping off the car in Lindau, why don't you drive to Appenzell (from Schwangau via Lindau and Bregenz, Austria)...

"Don't want to be doing this in the dark:" What time of year? Around the summer soltice, it doesn't get dark until after 10. At the winter soltice, the sun is under the horizon by 5.
