How busy is travel in Spain and Portugal during the

Thanksgiving is not a holiday in Spain and Portugal. So it will likely be no different than traveling at that time of the year one week before or after Thanksgiving.
We went to Italy last year over Thanksgiving because we had extra days of holiday not requiring vacation and they don't celebrate it. The biggest downside is that it gets dark relatively early and museums and such will likely close earlier than they would have a couple of months earlier.
