Are you looking for suggestions of where to rent, or which rental agencies to review? If the latter, then we've had good success with homelidays.com. They're a clearinghouse only, so you deal directly with the owner of the apartment. I look for ones with lots of reviews and lots of photos....but if it's away from the old center of town (where most tourists seem to like to rent), you may have problems finding one with many reviews.

For Madrid, finding a place 'just outside' will be difficult, since it's a rather large city...4.5 million people, so it does go on somewhat, and many of the smaller villages on the fringes are now nothing more than bedroom communities.
Segovia and Toledo would be obvious suggestions....very close by high speed rail.
But if you want to get away from all of that, may I suggest Talavera de la Reina, a small city of about 85,000 southwest of Madrid. It's about 90 minutes to the center of Madrid by train. Talavera is quite an attractive place, with an interesting mix of old and new, going back to Celtic times, and is the site of a famous battle during the Spanish War of Independence. It's also very famous for its pottery. The city has a large number of young people because of its university (so there are lots of great bars and nightlife) and it's increasingly becoming a destination for young families who simply cannot afford to live in Madrid.
Sorry....not as familiar with the Cordoba area.
