I know that finding a hotel is difficult, but assuming lodging is not an issue, I was wondering just how different and worthwhile is a trip to Spain the week before Easter, especially in Seville? How many of you have had that experience and what did you think of it?

We stayed in Arcos de la Fontera 3 or 4 years ago beginning on Good Friday and leaving the day after Easter. It was wonderful. The parades of saints at nights, the running of the bulls (ok 1 bull in each direction - one uphill one down separated by at least an hour). I come from a rather dour Protestant upbringing and loved the whole fiesta color and drama thing and then the solemn Good Friday service (which since I don't speak Spanish I just perceived to be solemn). It was an altogether wonderful experience (despite the fact I remain a rather staid Protestant lol). Easter in Spain is a great great experience.
