I will be traveling next month to Madrid, Sevilla, Tarifa, and Granada and would love to have some recomendations of good restaurants in any or all of these places.
Do you have RS Spain Guide book yet? If so, good. If not, you should get it as soon as possible as it has lots of good information for you that we used when touring in Spain and Portugal.
Try to get a reservation at Botin in Madrid, its the oldest restaurant in the world and they are fabulous!

As mentioned above, Restaurante Botin next to the Plaza Mayor. It's "The Oldest Restaurant in the World" and is a definite MUST-DO for dining in Madrid. Try their famed roasted suckling pig ("Cochinillo") or lamb ("Cordero"). The place isn't cheap, but it's not particularly expensive, either, and just beautifully rustic inside. Even the brick-walled, brick-ceiling "bodega" in the basement. (careful of the narrow, winding wooden steps down) Another excellent place - not at all touristy - is the Galician-style seafood restaurant, Taberna Maceiras towards the bottom of the pedestrian Calle de Huertas. Around the corner, on Calle Jesús, they have another location. The seafood is fresh, good, and inexpensive. This is VERY family-style dining, too, with low wooden tables and no-back wooden stools. It can be crowded, too, so you may literally be rubbing elbows with those at the table next to you. Mostly a younger clientèle in their 20s, 30s, and maybe 40s.
