I'm going to be traveling from Munich to Venice by train in January and wanted to know what the best and most convenient place in Austria on that route to stop and snowboard/ski for a day.

There's one resort that you can see from the Brenner Pass Autobahn, just south of Innsbruck. Let me look up the name a little later and I'll get back to you...

Most convenient would be Monte Cavallo, just a kilometer from the Vipiteno train station on the mainline between Munich and Venice. Not a huge area (4 lifts) but would definitely keep you busy for a day.
